Due to the extreme increase in demand amidst Coronavirus concerns, demand for eggs continues to surge while availability remains limited.
Consumers are stockpiling eggs while hunkering down at home. Large-sized eggs are most scarce given this size is most commonly purchased by consumers in retail outlets. Supply is tight on medium sized eggs as well. Demand for eggs is further increased due to the upcoming Easter holiday when baking activities increase. Substitutions may occur in an attempt to satisfy needs.
