Originally from Jamaica, Chef Jimmy Scott brings with him a wealth of experience and a spirit of continuing education that he is glad to share with all of his apprentices. Chef Jimmy’s motto is to create meals that are “nice and sexy”. This means if it is nice, it is delicious; and if it is sexy, it looks beautiful. Influenced by his mother’s skill in the kitchen, Jimmy at age six quickly became fascinated at how she could combine ingredients and create spectacular meals in a short amount of time. Jimmy took his interest to the next level as a chef for his fellow students in high school. He and three other students would start the day at 4 AM by milking the cows and preparing breakfast for 500 students. Then he would attend classes and serve lunch. After high school, Jimmy took a position with the Ocean Hotel in Jamaica as a commis cook. His desire to excel was fostered in a great learning environment where he mastered each station in the kitchen on his own time and was eventually promoted to purchasing and receiving. When he had built a solid foundation of foodservice knowledge, Jimmy enrolled in culinary classes at the prestigious Heart Academy. Following graduation, he continued his practice of the cooking craft. Jimmy feels this in an important aspect of someone who earns the title of chef. He believes practicing the craft takes a love of cooking, the use of fresh seasonal ingredients, creating recipes from scratch and results in a sense of accomplishment and self-expression. As a former foodservice salesperson, Jimmy also realizes he cannot do his job without the support of top quality vendors. Growing up in Jamaica has given Jimmy a high standard to judge tropical fruits and vegetables in which his menu revolves around. “If I need the perfect mango or pineapples, I know when I call Royal they will deliver the best.” Chef Jimmy counts on Royal Food Service to meet his demands for reliability, service, and quality product that add value to every meal he serves.
