Recipe yields four servings
Ingredients: 1 -8 oz. portion of beef tenderloin ½ c. homemade mayonnaise 1 t. chopped capers 1 t. chopped shallots 1 t. chopped chives Dash of worchestershire sauce Dash of tabasco sauce ½ lemon juice Salt and black pepper, to taste
Production:
With a sharp knife, dice tenderloin into brunoise. Transfer to a bowl on ice. Add capers, shallots, chives, 2/3 of the mayonnaise, a dash of worchesterhire and tabasco, lemon juice, and gently combine. Season lightly with salt and pepper; taste, and adjust seasoning and mayonnaise amount according to personal taste. Garnish with homemade fries.
Serve with Pommes Frites and Homemade Mayonnaise..
